Vegan Smoked Almond Dark Chocolate Turtles and Caramel



Enjoy these vegan dark chocolate turtles with smoked almonds and caramel for a tasty treat. Roasted almonds are covered in a rich homemade caramel, then dipped in dark chocolate and topped with smoked almonds. The flavors and textures make it impossible to resist.

Ingredients:

  • 1 cup raw almonds
  • 1 cup vegan dark chocolate chips
  • 1 cup pitted dates
  • 2 tablespoons almond butter
  • 1/4 cup maple syrup
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon vanilla extract

Instructions:

Start by heating the oven to 350F 175C

Place the almonds on a baking sheet and roast them for 8 to 10 minutes, until they are just barely toasty

Allow them to totally cool down

In the meantime, use a double boiler or the microwave to melt the dark chocolate chips, stirring every so often until the mixture is smooth

To make a sticky caramel-like sauce, put pitted dates, almond butter, maple syrup, sea salt, and vanilla extract in a food processor and blend them together

Put a small amount of the caramel mixture on each almond and press it down so that it forms a turtle shape

Put the caramel almond turtles on a baking sheet lined with parchment paper

Freeze for 10 to 15 minutes to make them firm

As soon as the turtles are hard, dip each one in the melted chocolate so that they are all covered

Put them back on the baking paper

While the chocolate is still wet, put some smoked almonds on top of each turtle

Put it back in the fridge for another 10 to 15 minutes so the chocolate sets

Keep in the fridge in a container that won't let air in until you're ready to serve

Blend until smooth

Mix until it's creamy and smooth

Put the filling into the crust that has been prepared

A spatula can be used to make the top smooth

Put it in the freezer for at least 4 hours, or until it's firm

Add blood orange slices and cocoa powder to the top once it's set before serving

  • 150g di zucchero
  • 3 uova

Instructions:

Preriscalda il forno a 180C

Fai fondere il cioccolato e il burro a bagnomaria

In una ciotola, sbatti le uova con lo zucchero fino a ottenere un composto chiaro e spumoso

Aggiungi la scorza grattugiata di arancia e la polpa dei frutti della passione al composto di uova e zucchero

Mix BBQ sauce with brewed espresso to create the basting sauce

After 3 hours, start basting the ribs with the espresso BBQ sauce every 20 minutes for the next hour, allowing the flavors to meld

Increase the temperature to 275F 135C and cook for an additional hour, continuing to baste

Check for doneness the meat should easily pull away from the bone

Remove the ribs from the grill/smoker and let them rest for 10 minutes before slicing

  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup balsamic vinaigrette dressing

Instructions:

Get your grill ready for high heat

On both sides, season the flank steak with paprika, salt, and pepper

Season the flank steak and put the corn ears on the grill

Cook the steak for 4-5 minutes per side for medium-rare, and grill the corn until it's lightly charred, turning occasionally

Take the corn and steak off the grill

Give the steak 5 minutes to rest before cutting it thinly across the grain

Take the kernels out of the grilled corn with a knife and set them aside

Mix the mixed greens, cherry tomatoes, red onion, and crumbled feta cheese together in a large salad bowl

Pour olive oil over the salad and toss it around to cover everything evenly

Place the salad on plates and top with corn kernels and slices of grilled flank steak

For each serving, drizzle balsamic vinaigrette dressing on top

Serve right away and enjoy!
