Paleo Cinnamon Bun Breakfast Cookies



You can start your day off with these delicious and healthful Paleo Cinnamon Bun Breakfast Cookies. Rich in nutty flavors with a touch of cinnamon, they're a filling and healthy choice for breakfast or a snack.

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup chopped pecans
  • 1/4 cup raisins
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions:

In a mixing bowl, combine almond flour, coconut flour, shredded coconut, chopped pecans, and raisins

In a separate small bowl, mix together melted coconut oil, maple syrup, ground cinnamon, vanilla extract, and a pinch of salt

Pour the wet mixture into the dry ingredients and stir until well combined, forming a cookie dough-like consistency

Divide the dough into equal portions and shape them into cookies using your hands

Place the cookies on a parchment-lined tray and flatten them slightly with the back of a fork

Place the tray in the refrigerator and let the cookies set for at least 30 minutes
