This creamy soup is loaded with tender chicken and hearty wild rice, making it a satisfying meal for busy school nights.
Ingredients:
- 1 lb chicken breasts
- 1 cup wild rice
- 1 onion, chopped
- 3 carrots, sliced
- 3 stalks celery, sliced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp flour
- Salt and pepper to taste
Instructions:
To make chicken broth, put chicken breasts, wild rice, onion, carrots, celery, and the broth from the chicken
Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours
Grab the chicken, shred it, and put it back in the slow cooker
Mix heavy cream and flour together in a small bowl with a whisk until the mixture is smooth
Blend the cream into the soup
Add another 30 minutes of cooking time on high until the soup gets thicker
Add pepper and salt to taste
Enjoy while hot!
