Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/3 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup non-dairy milk such as almond or soy milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 tbsp apple cider vinegar
- 1 cup vegan candy-coated chocolates such as vegan M&M's
- 1/4 cup vegan sprinkles
Instructions:
Preheat the oven to 350F 175C
Grease and flour a cake pan
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt
Add the non-dairy milk, vegetable oil, vanilla extract, and apple cider vinegar to the dry ingredients
Mix until well combined
Fold in half of the vegan candy-coated chocolates and half of the vegan sprinkles into the batter
Pour the batter into the prepared cake pan and smooth the top with a spatula
Sprinkle the remaining vegan candy-coated chocolates and sprinkles evenly over the top of the batter
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean
Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely
Once cooled, slice and serve
