Ingredients:
- 1 cup gluten-free pancake mix
- 1/2 cup mini marshmallows
- 1/4 cup chocolate chips
- 1/4 cup crushed gluten-free graham crackers
- 1/2 cup milk or dairy-free alternative
- 1 egg
- 2 tablespoons vegetable oil
Instructions:
In a mixing bowl, combine the pancake mix, milk, egg, and vegetable oil
Stir until well combined
Fold in the mini marshmallows, chocolate chips, and crushed graham crackers into the pancake batter
Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or cooking spray
Pour 1/4 cup of the pancake batter onto the skillet for each pancake
Cook until bubbles form on the surface of the pancakes, then flip and cook until golden brown on the other side
Repeat with the remaining batter
Serve warm with additional marshmallows, chocolate chips, and crushed graham crackers on top, if desired
