Ingredients:
- 250g pasta preferably rotini or penne
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onions, sliced
- 1/4 cup vegan ranch dressing
- Salt and pepper to taste
Instructions:
Cook pasta according to package instructions until al dente
Drain and rinse with cold water to stop the cooking process
In a large mixing bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, parsley, and green onions
Add vegan ranch dressing to the bowl and toss until everything is evenly coated
