Cowboy Caviar Couscous Salad is a refreshing and hearty salad that combines the flavors of the Southwest with the lightness of couscous. It's perfect for picnics, barbecues, or as a side dish for any occasion.
Ingredients:
- 1 cup couscous
- 1 1/4 cups water
- 1 can 15 oz black beans, drained and rinsed
- 1 cup corn kernels fresh or frozen
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Avocado slices for garnish optional
Instructions:
In a medium saucepan, bring the water to a boil
Stir in the couscous, cover, and remove from heat
Let it sit for 5 minutes, then fluff with a fork and let it cool
In a large bowl, combine the cooked couscous, black beans, corn, cherry tomatoes, red bell pepper, red onion, cilantro, and parsley
In a small bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper
Pour this dressing over the salad and toss to combine
Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld
Garnish with avocado slices, if desired, and serve
